The Parish Vineyard Riesling is defined by a long, taut spine of natural acidity, balanced by textured complexity, with flavours of a wild cottage garden - chamomile, feijoa, dried lavender, juniper and grapefruit. Aromas of tea rose, cumquat and ocean spray. It’s hard to see past the perfect food match of freshly shucked Tasmanian oysters, although fried haloumi or fish and chips with tartar sauce pair well too. For something a little different, try with a salad of ancient grains, salt bush and pomegranate.
